Recipe: Grilled Lamb Chops with Mustard BBQ Sauce

Now that the weather has finally cooled down (well, it's more than just cooled down - we're actually expecting our first snowfall of the season later tonight!), I've once again taken up regular residence in my kitchen. As much as I always enjoy my mini cooking break during the hotter months (less cooking = more time for checking out fab new restaurants!), I'm always eager to get back into the kitchen and taste test all of the new recipes I've spent the summer collecting.

One of those recipes I've been eagerly waiting to try out is from none other than Chicago favorite Jeff Mauro, aka the Sandwich King. Diana and I had the opportunity to see Jeff in action at Chicago Gourmet a few years ago and we both walked away with a newfound appreciation for his cooking (that man knows his stuff!)... we may also each have a bit of a secret crush on him, but that's another story. ;-)


Following his stints on the seventh season of Food Network Star (which he won!), The Kitchen, Sandwich King, and $24 in 24, Jeff partnered with a longtime friend and entrepreneur to launch his line of barbecue sauces last year. Even more exciting, his first ever restaurant, Pork & Mindy's is *thisclose* to opening (scheduled for December in Bucktown). Yay!

In honor of the upcoming opening, I decided it was finally time to break out one of those recipes I've been hoarding: Grilled Lamb Chops with Pork & Mindy's Mustard BBQ Sauce (one of Jeff's favorite seasonal dishes!). While BBQ was a staple during the summer months of my childhood, I've really learned to appreciate it as the perfect cozy cold-weather food that it is since moving to Chicago - I mean really, is there anything better than a steaming pile of seasoned meat to warm you up?! Thanks to the tangy mustard BBQ sauce (my favorite of his three sauces), this flavorful dish is super easy to make.

Grilled Lamb Chops with Pork & Mindy's Mustard BBQ Sauce


INGREDIENTS
Pork & Mindy’s Mustard BBQ Sauce
12 2oz. lamb chops
Kosher salt
Fresh ground black pepper
Olive oil
4 stalks green onion slivered

DIRECTIONS
1. Preheat the grill to high. Brush chops with olive oil and season lamb on both sides with salt and pepper to taste.


I chose to use loin lamb chops, but you can use any cut you prefer (loin, rib, or sirloin) for this recipe. Note: if you're using a grill pan, swap out the olive oil for grapeseed oil (I usually use a roasted garlic variety); otherwise, you'll have a big ol' smokey mess!

2. Put the chops on the grill and cook until golden brown and slightly charred, 2 to 3 minutes.


3. Brush with Pork & Mindy’s Mustard Sauce, then turn the chops over and continue grilling to medium doneness, 2 to 3 minutes more, brushing the top with more of the sauce.


4. Remove chops from grill and place on a serving platter. Brush with more of the sauce and let rest for 5 minutes. Top with slivered onions and serve.

 Serve with a simple side - peas and/or asparagus tends to pair well with lamb!

    1. I agree, I have never tried cooking lamb, its always beef. But I have to try this.
